Festive Low Fat Raspberry Creme Brulee

This simple little recipe is a favourite with  adults and children in my family. Yesterday, I made it by special request for the children and they remarked on how Christmassy it looked.They suggested serving it with a sprig of holly on the plate. I hadn’t thought of it as a Christmas dessert option before, but they’re right. It looks fantastic and is so quick and easy you could successfully pull it together even after you’ve had too much wine.

You need

  • Frozen or fresh raspberries
  • Castor sugar
  • Thick low fat natural yogurt or natural Greek style yogurt
  • Brown sugar

I like to serve in glasses so you can see the colours

Defrost the raspberries and add one dessert spoonful of castor sugar
Spoon in to the glasses, filling each glass about one third full
Top up with the natural yogurt
Sprinkle brown sugar over the top
Pop under the grill until the brown sugar melts

And that’s it – utterly delicious and healthy.

I’m sorry I didn’t take a photo yesterday so you could see how good these look.

Oh, and by the way, raspberries are one of those foods that are supposed to be good for the menopausal woman.
